Ingredients:
3 ears of corn shucked
1 jalapeño, deseeded and diced small
1 small green bell pepper, diced small
¼ cup chopped cilantro
2 tablespoons Tajin chili powder
1 lime juiced
¼ cup sour cream
¼ cup mayonnaise
¼ cup cotija cheese or salted ricotta or Parmesan
Salt and white pepper to taste

Instructions:
1. Boil the corn in salted water for 15 minutes or so
2. Dice the peppers and chop the cilantro
3. Mix the sour cream, mayonnaise, chili powder and lime juice
4. Combine the herbs and cream dressing and fold in the corn and peppers
5. Plate in a bowl and liberally crumble the cheese on top as well as some extra cilantro and chili powder
