Perfect Simple Gazpacho

Little more than garden-grown tomatoes and garlic; this easy-to-make soup is an ideal light lunch on hot summer days.

Ingredients:

2 pounds tomatoes

1 small to medium-sized cucumber

1/4 cup sherry vinegar

1 clove garlic

1 Cubanelle or Anaheim chili or jalapeño

Salt & black pepper

Instructions:

1. Simply combine everything in a food processor or blender and purée or leave somewhat chunky.

2. Garnish with chopped vegetables or a dollop of Greek yogurt, sour cream or drizzle of olive oil. Or all three!

3. Pairs well with a side of tomato ricotta toast
