Grilled Green Beans with Lemon Dressing

Grilling beans is the perfect way to bring out their fresh flavor while keeping them crisp. These grilled green beans are the perfect side dish to bring to any cookout or summer potluck. If there happen to be any leftovers, try them chopped as a salad topping.

Ingredients

  • 1 lbs green beans
  • 1 head garlic, cloves peeled
  • 2 Tbsp olive oil
  • 10 mint leaves, torn or roughly chopped
  • cup shaved Parmesan cheese
  • Flaky/coarse salt
  • Lemon Dressing (below)

Lemon Dressing:

  • 1 lemon, juiced
  • 1 tsp honey
  • 1 Tbsp olive oil
  • tsp red pepper flakes
  • tsp kosher salt
  • 1 tsp thyme, chopped
  • 10 mint leaves, minced

Instructions

Preheat grill on medium-high.

Toss green beans and garlic with olive oil and spread on a vegetable grill plate or layer of aluminum foil. Grill for 15-20 minutes, stirring every 5 minutes. If garlic starts to burn, remove cloves as necessary.

Whisk together dressing ingredients while beans are cooking.

Remove beans when they have developed some blistering but are still crunchy (or are cooked to your liking). Mince 4-5 grilled garlic cloves and add them to the dressing.

Toss green beans with dressing and torn mint leaves. Salt to taste. Place in a serving dish and sprinkle with shaved Parmesan. Serve warm.
